  • 1/3 cup granulated sugar

  • 1/2 cup unsalted butter, softened

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 4 cups all-purpose flour

  • 1 teaspoon salt

1. Prepare the Dough:

  1. In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until frothy.

  2. In a large mixing bowl, beat the sugar and softened butter together until creamy. Add the eggs and vanilla extract, and mix until combined.

  3. Gradually add the flour and salt, mixing until a soft dough forms. You can use a stand mixer with a dough hook or knead by hand on a floured surface for about 5-7 minutes until the dough is smooth and elastic.

  4. Add the rainbow sprinkles and gently knead them into the dough.

  5. Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.

2. Prepare the Filling:

  1. In a small bowl, mix the softened butter, brown sugar, and cinnamon until well combined.

3. Assemble the Rolls:

  1. Once the dough has risen, punch it down to release the air and roll it out on a floured surface into a large rectangle (about 12x18 inches).

  2. Spread the cinnamon filling evenly over the dough, leaving a small border around the edges.

  3. Carefully roll the dough into a tight log from the long side.

  4. Using a sharp knife or dental floss, cut the log into 12-15 even slices.

  5. Place the slices in a greased baking dish, cover them with a towel, and let them rise for another 30 minutes.

4. Bake the Rolls:

  1. Preheat your oven to 350°F (175°C).

  2. Bake the rolls for 20-25 minutes, or until they are golden brown and cooked through.

5. Prepare the Icing:

  1. In a medium bowl, whisk together the powdered sugar, melted butter, milk, and vanilla extract until smooth. If the icing is too thick, add a little more milk until you reach the desired consistency.

6. Finish and Enjoy:

  1. Once the rolls are out of the oven, let them cool for a few minutes before drizzling the icing generously over the top.

  2. Sprinkle extra rainbow sprinkles on top for that extra touch of funfetti magic.

  3. Serve warm and enjoy the sweet, gooey goodness of your homemade Funfetti cinnamon rolls!

My First Baking Adventure with Baby:

This was my very first time baking cinnamon rolls with my baby, and it was an experience filled with laughter, mess, one less arm, and precious memories. Watching my little one’s fall asleep while I hold her and make a HUGE mess was a moment I'll always cherish. I can't wait until she is older and can help me out! Baking together not only made the process more fun but also created a special bonding time for us.

These Funfetti cinnamon rolls are a delightful twist on a classic treat, perfect for celebrating special occasions or simply brightening up your day. The combination of fluffy dough, sweet cinnamon filling, and colorful sprinkles creates a dessert that's as fun to make as it is to eat. Give this recipe a try and watch as smiles light up around your table.
