WHAT THE HEALTH?

I am going to begin by saying the Vegan Diet isn't for everyone! Heck!!! I'm still struggling with it!!! And, I will never pressure my beliefs on anyone or judge them for not thinking the same way that I do.....But if you're interested here is my vegan journey!


Recently I decided to go on a Vegan diet after watching the documentary 'What the Health'. Currently, I consider myself vegetarian, but only because I'm finding it hard to stop eating fish...however, I'm working on it every day! (I want to be on a full vegan diet before school starts)..As soon as I watched 'What the Health' I became engulfed in educating myself further about veganism... this is where I stumbled upon the documentary Vegucated... this is were I was exposed to the inhumane practices of factory farms....("Glass Walls" video by Paul McCartney)! After watching I decided to never eat a living creature again! (i.e. cows-meat and dairy, pigs-meat,chickens-meat and eggs...ect like I said I'm still working on cutting fish completely out of my diet. ) There are also so many health benefits to going vegan such as, lower risk of diabetes, heart disease and cancer.... I religiously researched Veganism for days before I decided to be fully commited..once I felt like I knew enough about the diet, I went to the store and started my Vegan journey!

WHY GO VEGAN (from PETA)

1. Healthier you!

2.Helps animals- Every vegan saves more than 100 animals per year!

3. Happier you!- According to the Academy of Nutrition and Dietetics, vegans are less likely to develop heart disease, cancer, diabetes, or high blood pressure than meat-eaters are.

4.Meat is gross!- Meat is often contaminated with feces, blood, and other bodily fluids—all of which make animal products the top source of food poisoning in the United States.

5.Save the Planet- Meat is not green. Consuming meat is actually one of the worst things that you can do for the Earth.

MY FAVE VEGAN MEALS-

- I SHOP AT LEAST TWICE A WEEK TO GET FRESH PRODUCE...BELOW IS A QUICK RUN TO THE GROCERY STORE!


BREAKFAST- VEGAN/GLUTEN FREE NUTELLA BANANA BREAD

-2 slices of toast: Ezekiel Bread

-1 Chiquita Organic Banana

-1 tbsp Justin's chocolate hazelnut butter blend (I was devastated to find out Nutella contains whey & skim milk) or you can make your own!



LUNCH: MANCINO'S PIZZA

For lunch my family and I went out... I ordered a personal pizza without cheese...and every veggie!




DINNER: ZOODLES

-Zuccini

-pre sliced butternut squash noodles

-1 CUP Spinich

-1/2 CUP diced onion

-1/3 CUP diced portabello mushrooms

-Sesame oil to your liking

-Gluten free teriyaki sauce to your liking

-Bread with Organic Roasted Pepper Hummus on it

-heat skillet with coconut oil, add all veggies...cook for 5 mins...

occasionally stirring then add the sauce cook for 3 more mins.


DINNER: BOCCA SPICY CHICK'N SANDWHICH

-1 Bocca Spicy Chick'n Patty

-1 Udi's gluten free burger bun

-AVO MASH-

-1 Avocado mashed

-handful of tomatoes chopped

-onion to your liking chopped

-lemon juice

-sweet corn for the side with vegan butter and basil


BREAKFAST/LUNCH: POTATOES WITH A SRIRACHA MAYO SAUCE

RECIPE FROM LIV'S HEALTHY LIFE ON YOUTUBE

-2 medium potatoes peeled

-chop into cube shapes

-add to medium pot, add enough water till the potatoes are just about covered. (about 2 cups)

-boil 5-10 mins till you can softly put a fork through

-In skillet add tsp of oil (I used coconut oil)

-add potatoes

-add tsp of paprkia

- add tsp of basil

- salt and pepper to your liking

-for a side I toasted Sourdough bread and added Avocado, and cherry tomatoes and black pepper.

-Stir potatoes on skillet until they are as crispy as you want them.

-Plate with toast.

-for a topping add some Vegan Mayo and Sriracha mix together... (I drizzled it onto of the potatoes, but you can put it into a small dish and dip the potatoes instead.




*I find most of my recipes on Pinterest...I have a VEGAN board filled with recipes I can't wait to try!!!
