MY FAVE EASY VEGAN BREAKFAST FOODS

My favorite part of the day is waking up and making breakfast! Being a college student, however, I don't always have the time to add 100 ingredients into a bowl or cook something that takes more than a half hour... so through trial and error, here are some of my favorite/super simple breakfast foods for you to try! 


BEST EVER VEGAN PANCAKES:

DRY INGREDIENTS:

-1 C Gluten free flour

-2 tbs cane sugar

-1 tbs baking powder

-1/2 tsp salt

WET INGREDIENTS: 

-1 C dairy free milk

-1 tbs apple cider vinegar

-1/2 tsp vanilla extract

extra: I added non dairy chocolate chip cookies into the batter! 

HOW TO:

1. In a medium bowl, add all dry ingredients. Stir to combine.

2. add the wet ingredients to the dry mixture. STIR. Let sit for a couple seconds. ( I added the chocolate chips here, but its optional)

3. add 1/4 cup of the batter to greased pan and cook until golden. 

4. serve with warm maple syrup, peanut butter, or fruit. whatever garnish you like. (I topped mine with Organic Bananas, Maple syrup and extra non- dairy chocolate chips)

5.ENJOY


CRUNCHY BREAKFAST POTATOES 

INGREDIENTS:

-two medium potatoes cut into cubes

-paprika

- garlic powder

-salt & pepper

-vegan mayo

-sriracha 

-grapeseed oil 

HOW TO:

1. In a bowl mix chopped potatoes, oil, garlic powder, paprika, s&p. Mix together. 

2. Add potatoes to oil in a skillet. 

3. Cook for about 5 mins then flip and cook for another five mins. Potatoes should look crispy. 

4. Cook to desired softness. 

5. Serve with mixture of sriracha and mayo ontop of the potatoes. Enjoy. 


PEANUT BUTTER TOAST WITH BANANA 

INGREDIENTS:

-2 slices of toast

-one large organic banana 

-organic peanut butter

-agave

-cinnamon 

HOW TO:

1. Toast bread 

2. Once bread is toasted add peanut butter& sliced banana.  Top with agave and cinnamon. Enjoy!! 


TOFU SCRAMBLE BREAKFAST SANDWICHES 

INGREDIENTS:

-1/2 block of tofu

- grape seed oil

-2 scallions 

-8 diced cherry tomatoes 

-3/4 tsp cumin & tumric 

-1 tbls nutritional yeast

- salt and pepper

-toasted bagel or toast to put the scramble on top of 

-1/2 avocado (optional)


HOW TO: 

1. In a skillet add 2 tsp grape seed oil, add scallions. Stir scallions into the oil. 

2. Add tofu.. scramble into chunks.

3. Add cumin and tumric. Stir. 

4. Add tomatoes. Stir 

5. Add salt & pepper and nutritional yeast. 

6. Serve ontop of toast or bagel. Add avocoado and enjoy!!!
